Gluten Free Chocolate Cupcakes with Cream Cheese Frosting





We're still perfecting the gluten free chocolate cupcake, but here's our recipe for the most deliciously perfect cream cheese frosting. {WARNING:  Do not read this recipe if you have an aversion to an obscene amount of sugar!}

1/2 stick butter
1/4 t. vanilla
6 oz. cream cheese
4c. powdered sugar

Cream vanilla, butter and cream cheese together.  Add in one cup of powdered sugar at a time.  Whip until smooth and creamy!  This makes a lot of frosting.  For 18 cupcakes, we only used half the batch.

  1. okay. Just made the GF cupcakes from "Allergy Free Cookbook". I wasn't expecting them to be great; but was in a rush. They turned out amazing. They call for soy chocolate milk, and we don't do soy so I made my own using with Coconut Milk, also substituted the vegetable oil with coconut oil. Yum!
